  • 1 ½ cups graham cracker crumbs (about 12 graham crackers)
  • 1 (397g) can sweetened condensed milk
  • 200g milk chocolate chips
  • 200g white chocolate chips
  • 1 ½ cups shredded coconut (desiccated)
  • 1 cup chopped pecans or walnuts
  • ½ cup dried cranberries, chopped
  • Sprinkles (optional, but highly encouraged for extra Christmas cheer!)

Instructions

  • Preheat your oven to 180°C (160°C fan/ Gas Mark 4). Grease a 9×13 inch baking pan and line with parchment paper, leaving an overhang on the sides for easy removal. Pour the melted butter into the pan and sprinkle the graham cracker crumbs evenly over the butter. Press down firmly to create a compact base.
  • Pour the sweetened condensed milk evenly over the graham cracker crust. This creates a sticky base for the rest of the ingredients to adhere to. Make sure to scrape every last bit out of the can!
  • Sprinkle the chocolate chips (both milk and white), shredded coconut, chopped nuts, and dried cranberries evenly over the condensed milk. Layering them in this order helps everything distribute nicely.
  • Bake in the preheated oven for 25-30 minutes, or until the coconut is lightly golden and the edges are set. Keep a close eye on it towards the end to prevent burning. The centre might still look slightly soft, but it will firm up as it cools.
  • Remove from the oven and let cool completely in the pan before cutting into bars. This is crucial for clean cuts! Lift the bars out of the pan using the parchment paper overhang, and then cut into squares or rectangles. Sprinkle with festive sprinkles while they’re still slightly warm, if desired.
