  • 250g cream cheese, softened
  • 200ml double cream
  • 150g icing sugar, sifted
  • 1 tsp peppermint extract
  • 100g mini marshmallows
  • 50g crushed candy canes
  • Red food colouring (optional)

Instructions

  • Place the softened cream cheese in a large bowl. Beat with an electric mixer until smooth and creamy.
  • In a separate bowl, whip the double cream until stiff peaks form. Be careful not to overwhip.
  • Gently fold the whipped cream into the cream cheese mixture. Then, sift in the icing sugar and fold until just combined. Be careful not to overmix.
  • Stir in the peppermint extract. If you want a more vibrant colour, add a few drops of red food colouring.
  • Gently fold in the mini marshmallows and most of the crushed candy canes, reserving a small amount for topping.
  • Cover the bowl with cling film and refrigerate for at least 2 hours to allow the flavours to meld. Before serving, sprinkle the remaining crushed candy canes on top.
