  • 100g (1 cup) shredded coconut
  • 170g (1 cup) chocolate chips
  • 85g (3/4 cup) chopped pecans (or walnuts)

Instructions

  • Preheat your oven to 180°C (350°F/Gas Mark 4). Line two baking trays with baking parchment.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract. Make sure everything is well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
