  • 1 kg potatoes, peeled and quartered (Maris Piper or King Edward are best)
  • 2 large onions, thinly sliced
  • 50g butter
  • 2 tbsp olive oil
  • 100ml milk
  • 50ml double cream
  • 1 tsp dried thyme
  • Salt and freshly ground black pepper to taste

Instructions

  • Place the potatoes in a large saucepan and cover with cold water. Add a pinch of salt and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender and easily pierced with a fork.
  • While the potatoes are cooking, melt the butter and olive oil in a large frying pan over medium-low heat. Add the sliced onions and thyme. Cook slowly, stirring occasionally, for 30-40 minutes, or until the onions are deeply golden brown and caramelised.
  • Once the potatoes are cooked, drain them well in a colander. Return them to the saucepan.
  • Add the milk and cream to the potatoes. Mash with a potato masher until smooth and creamy.
  • Stir the caramelised onions into the mashed potatoes. Season with salt and freshly ground black pepper to taste.
  • Serve the French Onion Mashed Potatoes hot and enjoy! Garnish with a sprinkle of fresh thyme or a pat of butter, if desired.
