Instructions

  • In a medium saucepan, whisk together the egg yolks and caster sugar until the mixture is pale and slightly thickened. This is an important step for creating a smooth, rich base for the eggnog.
  • Gradually whisk in the milk and double cream into the egg yolk mixture. Add the ground ginger, cinnamon, nutmeg, cloves, vanilla extract, and salt. Stir well to combine all the spices evenly. The aroma alone is enough to get you in the Christmas spirit!
  • Place the saucepan over low heat and cook, stirring constantly, until the mixture thickens slightly and coats the back of a spoon. Be patient and keep the heat low to prevent the eggs from scrambling. This usually takes about 5-7 minutes. It should be the consistency of thin custard.
