  • 240ml strong brewed coffee, chilled
  • 120ml heavy cream, cold
  • 2 tablespoons powdered erythritol (or your preferred keto-friendly sweetener)
  • ½ teaspoon vanilla extract
  • Ice cubes
  • Sugar-free chocolate shavings or cocoa powder for garnish (optional)

Instructions

  • Brew your coffee a little stronger than usual, as the ice will dilute it slightly. Allow it to cool completely; popping it in the fridge for at least 30 minutes works best. I find that a French press or espresso makes the best, richest coffee.
  • In a large, chilled bowl, pour in the cold heavy cream, erythritol, and vanilla extract. Use an electric whisk (or a hand whisk if you’re feeling energetic!) and whisk on medium-high speed until stiff peaks form. This usually takes about 2-3 minutes. Be careful not to overwhip, or you’ll end up with butter!
  • Fill a tall glass with ice cubes. Pour the chilled coffee over the ice, leaving some room at the top for the whipped cream.
  • Gently spoon the keto whipped cream on top of the iced coffee. Don’t be shy; a generous dollop makes all the difference!
  • If you’re feeling fancy, sprinkle a few sugar-free chocolate shavings or a dusting of cocoa powder over the whipped cream. It adds a touch of elegance and a lovely chocolatey flavour.
