  • 8 turkey wings
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 125ml cranberry sauce (smooth or with berries, your preference)
  • 60ml apple cider vinegar
  • 30ml soy sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • ½ tsp dried thyme

Instructions

  • Preheat your oven to 200°C (180°C fan/Gas Mark 6). While the oven heats up, pat the turkey wings dry with kitchen paper. This helps them to get nice and crispy.
  • In a large bowl, toss the turkey wings with olive oil, salt, and pepper. Make sure they are evenly coated. I find using my hands is the best way to do this – just be sure to wash them afterwards!
  • Spread the chopped onion in a large roasting tin. Arrange the turkey wings on top of the onion. This helps to flavour the onions as well as preventing the wings from sticking to the bottom of the tin.
  • Bake in the preheated oven for 30 minutes. This initial bake will render some of the fat and start the cooking process.
  • Whilst the wings are baking, prepare the cranberry glaze. In a saucepan, combine the cranberry sauce, apple cider vinegar, soy sauce, Dijon mustard, honey, and dried thyme.
  • Bring the glaze to a simmer over medium heat, stirring constantly until the sauce thickens slightly. This usually takes about 5-7 minutes. The glaze should be thick enough to coat the back of a spoon.
  • After the initial 30 minutes of baking, remove the turkey wings from the oven. Baste them generously with the cranberry glaze. Make sure to coat them well for that beautiful, sticky finish.
  • Return the turkey wings to the oven and bake for another 30-40 minutes, or until they are cooked through and the glaze is caramelised. Baste them with the glaze every 10 minutes to ensure even coverage and prevent burning. The internal temperature of the turkey should reach 74°C (165°F).
  • Let the turkey wings rest for 10 minutes before serving. This allows the juices to redistribute, resulting in more tender and flavourful meat.
