  • 1 kg chicken pieces (drumsticks, thighs, or a mixture)
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 100 ml pomegranate juice
  • 2 tbsp pomegranate molasses
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • Salt and black pepper to taste
  • Fresh pomegranate seeds, for garnish
  • Chopped parsley, for garnish

Instructions

  • Pat the chicken pieces dry with kitchen paper and season generously with salt and pepper.
  • Heat the olive oil in a large oven-safe skillet or frying pan over medium-high heat. Add the chicken pieces in batches and brown on all sides. Set the browned chicken aside on a plate.
  • Reduce the heat to medium and add the chopped onion to the skillet. Cook until softened and translucent, about 5 minutes. Add the minced garlic and grated ginger and cook for another minute until fragrant.
  • Pour in the pomegranate juice, pomegranate molasses, soy sauce, honey, smoked paprika, and ground cumin. Stir well to combine and bring to a simmer. The glaze should start to thicken slightly.
  • Return the browned chicken pieces to the skillet, nestling them in the glaze. Bring the glaze back to a simmer, then transfer the skillet to a preheated oven at 180°C (350°F) or Gas Mark 4. Bake for 30-40 minutes, or until the chicken is cooked through and the glaze has thickened and become sticky.
  • Remove the skillet from the oven and let the chicken rest for 5-10 minutes before serving. Garnish with fresh pomegranate seeds and chopped parsley.
